    Prepare the Potato Puree

    Peel and chop the potatoes into even pieces. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Make the Potato Puree

    Add butter and heavy cream to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside and keep warm.

    Cook the Broccolini and Pearl Onions

    In a pan, heat olive oil over medium heat. Add the pearl onions and cook until caramelized, about 5-7 minutes. Add the broccolini and sauté until bright green and tender, about 3-4 minutes. Season with salt and pepper.

    Cook the Chilean Sea Bass

    In another pan, heat a tablespoon of olive oil over medium-high heat. Season the sea bass fillets with salt and pepper. Place them in the pan and cook for about 4-5 minutes on each side or until golden brown and cooked through.

    Prepare the Truffle Vinaigrette

    In a small bowl, mix truffle oil with a pinch of salt and black pepper. Adjust the seasoning to taste.

    Plate the Dish

    On each plate, spoon a generous amount of potato puree. Place the Chilean sea bass on top, and arrange the broccolini and pearl onions beside it. Drizzle the truffle vinaigrette over the top and serve immediately.
