Blackened Salmon Salad

Prepare the Salmon

Rub the salmon fillets with blackening seasoning and let them sit for 10 minutes.

Cook the Salmon

Heat olive oil in a skillet over medium-high heat. Cook the salmon for about 4-5 minutes on each side until blackened and cooked through.

Assemble the Salad

In a large bowl, toss mixed greens, cherry tomatoes, cucumber slices, and avocado. Top with the cooked salmon and drizzle with lemon vinaigrette.

Marinate the Tuna

Combine soy sauce, sesame oil, and wasabi in a bowl. Marinate the tuna steaks for 15 minutes.

Sear the Tuna

Heat a skillet over high heat and sear the tuna for about 1-2 minutes on each side for rare, or longer for desired doneness.

Garnish

Sprinkle sesame seeds and chopped green onions over the seared tuna. Serve immediately.

Parmesan Crusted Chicken Caesar

Prepare the Chicken

Preheat oven to 375°F (190°C). Dip chicken breasts in beaten eggs, then coat with a mixture of breadcrumbs and parmesan cheese.

Place the chicken on a baking sheet and bake for 25-30 minutes until golden brown and cooked through.

Toss romaine lettuce with Caesar dressing. Serve the salad topped with sliced Parmesan crusted chicken.
