Roast the Garlic
Preheat your oven to 400°F (200°C). Cut the top off the whole bulb of garlic to expose the cloves, drizzle with a bit of olive oil, wrap in aluminum foil, and place in the oven. Roast for about 30-35 minutes or until the cloves are soft and caramelized. Remove from the oven and let cool slightly before squeezing out the roasted garlic from the skins.

Prepare the Hummus
In a food processor, combine the roasted garlic cloves, canned chickpeas (drained and rinsed), tahini, lemon juice, olive oil, ground cumin, and salt. Blend until smooth.

While blending, drizzle in the water to adjust the consistency of the hummus to your preference. Blend until creamy and smooth.

Taste the hummus and adjust seasoning if necessary. Transfer to a serving bowl, drizzle with olive oil, sprinkle with paprika, and garnish with fresh parsley. Serve with pita bread, vegetables, or as a spread.
