Preparing the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create fries.

Soaking the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch, resulting in crispier fries.

Drying the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

Heating the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Frying the Fries
Carefully add the dried fries in batches to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Seasoning the Fries
Immediately toss the hot fries with salt and black pepper while they are still hot.

Adding Parmesan and Truffle Oil
In a large bowl, combine the hot fries with grated Parmesan cheese and drizzle with truffle oil. Toss well to ensure the fries are evenly coated.
