Seafood and Vegetables
Method
Preparation
- 1
Prepare the Seafood
In a large pot, bring salted water to a boil. Add the calamari and cook for 2-3 minutes until they turn opaque. Remove them with a slotted spoon and transfer to an ice bath to stop the cooking process. In the same water, add the shrimp and cook for 2-3 minutes until pink. Remove and place in the ice bath. Next, add the mussels and clams to the boiling water. Cover the pot and steam for about 5 minutes or until they open. Discard any that remain closed. Remove from the pot and let cool.
- 2
Prepare the Vegetables
In a large mixing bowl, combine the finely sliced fennel, white beans, black olives, and cherry tomatoes. Toss gently.
- 3
Combine and Marinate
Once the seafood has cooled, add the calamari, shrimp, mussels, and clams to the vegetable mixture. Drizzle with olive oil, season with salt and pepper to taste, and add a splash of lemon juice. Gently toss to combine all ingredients. Cover and let marinate in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
