Prepare the Baguette
Slice the baguette into 1/2 inch thick slices.

Brush with Olive Oil
Place the slices on a baking sheet. Brush both sides with olive oil and sprinkle with salt and black pepper.

Toast the Crostini
Preheat the oven to 375°F (190°C). Bake the baguette slices for 10-15 minutes or until golden brown and crispy.
Caramelized Onion Marmalade

Slice the Onions
Peel and thinly slice the onions.

Cook the Onions
In a large skillet, melt the butter over medium heat. Add the sliced onions and salt. Cook, stirring occasionally, for about 20-25 minutes until the onions are soft and caramelized.

Add Balsamic Vinegar and Sugar
Once the onions are caramelized, add the balsamic vinegar and brown sugar. Stir and cook for another 5 minutes until the mixture thickens slightly.

Cool the Marmalade
Remove from heat and let the onion marmalade cool slightly.

Top with Roast Beef
Layer a slice of roast beef on top of the onion marmalade.

Add Cheese and Garnish
Place a slice of Brillat Savarin cheese on top of the roast beef. Optionally sprinkle with fresh thyme.

Serve
Arrange the crostini on a serving platter and enjoy!
