Prepare the Little Gem Lettuce
Rinse the little gem lettuce heads thoroughly under cold water. Pat them dry with a clean kitchen towel. Cut each head in half lengthwise to create quarters. Set aside.

Prepare the Boquerones
If using jarred boquerones, drain them from their marinade. If they are packed in oil, gently pat them dry with a paper towel to remove excess oil.

Make the Croutons
If using store-bought croutons, skip this step. To make homemade croutons, preheat your oven to 375°F (190°C). Cut day-old bread into bite-sized cubes. Toss the bread cubes with olive oil, salt, and pepper. Spread them on a baking sheet and bake for about 10-15 minutes or until golden brown and crispy. Let them cool before adding to the salad.

Shave the Parmesan
Using a vegetable peeler or a cheese slicer, shave the parmesan cheese into thin strips. Set aside for garnishing.

Assemble the Salad
In a large salad bowl, place the halved little gem lettuce. Drizzle with Caesar dressing and toss gently to coat the leaves evenly. Add the boquerones and croutons to the salad.

Top the salad with the shaved parmesan cheese. Serve immediately as a fresh starter or side dish.
