Prepare the Beets
Place the beets in a pot of salted water. Bring to a boil and then simmer for about 45 minutes, or until tender. Drain and let cool. Once cooled, peel off the skin using your hands or a peeler and cut into wedges.

Segment the Oranges
Using a sharp knife, cut the top and bottom off each orange. Stand the orange on one cut end and cut away the peel and pith, following the curve of the fruit. Once peeled, cut between the membranes to release the orange segments into a bowl.

Prepare the Greens
Wash and dry the arugula and endive. Tear the endive into bite-sized pieces and place them in a large salad bowl along with the arugula.

Combine the Salad
Add the beet wedges and orange segments to the bowl with the greens. Crumble the goat cheese over the top and sprinkle with marcona almonds.

Dress the Salad
Drizzle with champagne vinaigrette and toss gently to combine all ingredients. Serve immediately or chill for 15 minutes for flavors to meld.
