Ceviche Cups

Method

Preparation

  1. 1

    Prepare the seafood

Rinse the shrimp, scallops, and white fish under cold water. Pat dry with paper towels. Cut the shrimp, scallops, and fish into small, bite-sized pieces.

  2. 2

    Marinate the seafood

In a medium bowl, combine the seafood with lime juice and salt. Mix well to ensure the seafood is coated. Cover with plastic wrap and refrigerate for about 30 minutes, allowing the acid from the lime juice to 'cook' the seafood.

  3. 3

    Prepare the vegetables

While the seafood is marinating, finely chop the red onion, chili, and cilantro. Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Dice the avocado into small cubes.

  4. 4

    Combine ingredients

After 30 minutes, remove the seafood from the refrigerator. Add the chopped red onion, chili, cilantro, and diced avocado to the marinated seafood. Gently mix to combine all ingredients without mashing the avocado.

  5. 5

    Serve

Spoon the ceviche mixture into individual serving cups or bowls. Serve with tortilla chips on the side for scooping.
