Prepare the Beef
Trim any excess fat from the beef tenderloin. Wrap it tightly in plastic wrap and place it in the freezer for about 30 minutes to firm it up, making it easier to slice thinly.

Make the Marinade
In a medium bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, green onions, chopped cilantro, red chili flakes, sea salt, and fresh lime juice until combined.

Marinate the Beef
Once the beef is slightly firm, remove it from the freezer and slice it as thinly as possible using a sharp knife. Place the sliced beef in a shallow dish and pour the marinade over it, ensuring all slices are well-coated. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or ideally overnight.

Plate the Carpaccio
After marinating, arrange the beef slices on a serving platter in an overlapping pattern. Drizzle some of the remaining marinade over the top.
