Bone Marrow Preparation

    Prepare the Bone Marrow

    Preheat your wood-fired grill. Brush the bone marrow pieces with olive oil and season with salt and black pepper. Place them cut side up on the grill and cook for about 15-20 minutes until the marrow is bubbling and lightly caramelized.

Caramelized Onion Butter

    Make Caramelized Onion Butter

    In a skillet over medium heat, melt the unsalted butter. Add thinly sliced onions and sugar, cooking slowly until the onions are caramelized, about 20-25 minutes. Stir in the salt and remove from heat. Let it cool slightly before serving.

Grilled Sourdough

    Grill the Sourdough

    Brush the sourdough slices with olive oil. Place them on the grill, cooking for about 2-3 minutes per side until they are toasted and have grill marks.

Herb Salad

    Prepare the Herb Salad

    In a bowl, combine the mixed herbs, lemon juice, olive oil, and salt. Toss gently to combine and set aside.

Mushroom Conserva

    Make Mushroom Conserva

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the mixed mushrooms, thyme, and salt. Cook until the mushrooms are tender and the liquid has evaporated, about 15 minutes. Let cool and store in a jar.
