Cooking the Pasta

1. Boil Water

In a large pot, bring 4 cups of water to a boil. Add the salt once the water is boiling.

2. Cook Fusilli

Add the fusilli pasta to the boiling water. Cook according to package instructions, typically around 8-10 minutes, until al dente.

3. Drain Pasta

Once cooked, drain the pasta in a colander and set aside, reserving about 1/2 cup of the pasta cooking water.

Making the Sauce

4. Heat Oil

In the same pot, heat the olive oil over medium heat.

5. Sauté Garlic

Add the minced garlic to the pot and sauté for about 1 minute, until fragrant but not browned.

6. Add Tomatoes

Add the halved cherry tomatoes to the pot. Cook for 5-7 minutes, until they start to soften and release their juices.

7. Combine with Pasta

Add the drained fusilli pasta back into the pot. Toss to combine with the tomato mixture.

8. Add Basil and Cheese

Stir in the chopped basil and grated Parmesan cheese. If the mixture seems dry, add a little reserved pasta water to achieve the desired consistency.

9. Season

Season with black pepper to taste. Toss everything together to ensure the pasta is evenly coated.
