Lay the boneless turkey breast flat on a clean surface. Place the pork belly on top of the turkey breast, skin side up.

In a food processor, combine the rosemary, sage, thyme, garlic cloves, fennel seeds, red pepper flakes, salt, and black pepper. Pulse until finely chopped.

Spread the herb mixture evenly over the pork belly and turkey breast, ensuring full coverage. Sprinkle lemon zest on top.

Starting from one end, carefully roll the turkey and pork belly tightly into a log shape.
