Tonic Syrup Preparation

Make Tonic Syrup
In a medium saucepan, combine 4 cups of water and 1 cup of cinchona bark. Bring to a boil over medium heat. Reduce heat and let simmer for 30 minutes.

Strain and Sweeten
After simmering, strain the mixture through a fine mesh sieve to remove the cinchona bark. Return the liquid to the saucepan, add 1 cup of organic sugar (Sucanat), 2 tablespoons each of lemon and lime zest, and 1 teaspoon of citric acid. Heat over low until the sugar completely dissolves. Remove from heat and let it cool.

Store Tonic Syrup
Once cooled, transfer the syrup to a clean bottle and refrigerate. This syrup can be stored for up to 2 weeks.
Cocktail Assembly

Prepare Glass
Fill a highball glass with 1 cup of ice cubes.

Mix Ingredients
Pour 2 ounces of London Dry Gin over the ice, followed by 1 ounce of the homemade tonic syrup.

Add Sparkling Water
Top off the mixture with 4 ounces of sparkling water. Stir gently to combine.

Garnish
Garnish the cocktail with a wedge of lime.
