For the Caramel Sauce

Method

Chocolate Mousse Preparation

  1. 1

    Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in 30-second intervals until smooth. Let it cool slightly.

  2. 2

    Whip the Cream

In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

  3. 3

    Prepare the Egg Mixture

In another bowl, whisk together the eggs, sugar, and vanilla extract until thick and pale.

  4. 4

    Combine Ingredients

Fold the melted chocolate into the egg mixture, then gently fold in the whipped cream until fully combined.

  5. 5

    Chill the Mousse

Spoon the mousse into serving glasses and chill in the refrigerator for at least 2 hours before serving.

Fresh Fruit Salad Preparation

  1. 6

    Prepare the Fruits

Wash and slice the strawberries, peel and dice the kiwi.

  2. 7

    Mix the Fruit

In a bowl, combine strawberries, blueberries, and kiwi. Drizzle with honey and toss gently to coat.

  3. 8

    Garnish

Sprinkle fresh mint leaves over the fruit salad before serving.

Mini Cheesecakes Preparation

  1. 9

    Prepare the Crust

In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of muffin tins lined with paper liners.

  2. 10

    Make the Cheesecake Filling

In a mixing bowl, beat cream cheese and sugar until smooth. Add the egg and vanilla extract, mixing until well combined.

  3. 11

    Fill the Tins

Spoon the cheesecake mixture over the crust in each muffin tin.

  4. 12

    Bake

Bake at 160°C (320°F) for 15-20 minutes until the centers are set. Allow to cool before removing from the tins.

Caramel Sauce Preparation

  1. 13

    Cook the Sugar

In a saucepan, heat the sugar over medium heat until it melts and turns a golden amber color.

  2. 14

    Add Butter and Cream

Once the sugar is melted, carefully whisk in the butter until fully melted, then gradually add the heavy cream while stirring.

  3. 15

    Add Salt

Add a pinch of salt to the caramel sauce and stir until smooth. Let it cool before using.
