Sautéed Green Beans

Prepare the Green Beans
Trim the ends of the fresh green beans and wash them thoroughly under cold water.

Sauté the Green Beans
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the green beans, salt, and black pepper. Sauté for 5-7 minutes until the beans are tender-crisp.

Prepare the Shiitake Mushrooms
Preheat the oven to 400°F (200°C). Clean the baby shiitake mushrooms by wiping them with a damp cloth.

Roast the Shiitake Mushrooms
In a mixing bowl, toss the mushrooms with 1 tablespoon of olive oil, fresh thyme leaves, and 1 teaspoon of salt. Spread them on a baking sheet in a single layer and roast for 15-20 minutes until golden brown.
Crispy Onions

Prepare the Onions
Slice the large onion thinly and soak the slices in cold water for 30 minutes to reduce bitterness.

Coat and Fry the Onions
Drain and dry the onion slices. Toss them in 1 cup of all-purpose flour and season with 1 teaspoon of salt. In a deep skillet, heat 2 cups of vegetable oil over medium-high heat. Fry the onion slices in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Caramelized Onion Soubise

Blend the Soubise
Once the onions are caramelized, add 1 cup of heavy cream and blend until smooth. Adjust seasoning with salt if necessary.
