Cooking Pasta

    Boil the Pasta

    In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt.

    Cook the Rigatoni

    Add the rigatoni pasta to the boiling water and cook according to the package instructions, usually about 10-12 minutes, until al dente.

    Drain and Set Aside

    Once cooked, drain the pasta and set it aside, reserving a cup of pasta water.

Preparing Bolognese Sauce

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion, carrot, and celery. Sauté for about 5 minutes until softened.

    Add Garlic

    Add minced garlic to the skillet and sauté for another minute until fragrant.

    Brown the Meat

    Increase heat to medium-high and add the ground beef. Cook, breaking it up with a spatula, until browned, about 5-7 minutes.

    Add Tomatoes and Wine

    Stir in the crushed tomatoes, tomato paste, and red wine. Mix well.

    Season the Sauce

    Add dried oregano, dried basil, salt, and black pepper. Stir to combine and let the sauce simmer for about 20-30 minutes, stirring occasionally.

Combining and Serving

    Combine Pasta and Sauce

    Add the drained rigatoni to the Bolognese sauce and mix well. If the sauce is too thick, add reserved pasta water gradually until desired consistency is reached.

    Divide the pasta among serving plates and sprinkle with grated Parmesan cheese. Serve hot.
