Preheat your oven to 425°F (220°C). Wash and peel the Russet potatoes, then cut them into even-sized fries, about 1/4 inch thick.

In a large bowl, toss the cut fries with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Add Parmesan
Remove the fries from the oven and immediately sprinkle the grated Parmesan cheese over the hot fries, allowing it to melt slightly.

Mix the Ingredients
In a small bowl, combine ketchup, balsamic vinegar, brown sugar, and garlic powder. Stir until well mixed.

Taste the balsamic ketchup and adjust the sweetness or acidity by adding more brown sugar or balsamic vinegar, if desired.
Calabrian Chili Ranch

In another small bowl, mix ranch dressing, Calabrian chili paste, lemon juice, and chopped chives until fully blended.
