Take a mini sandwich roll and spread 2 tablespoons of hummus on one half.

Assemble Vegetarian Sandwiches

Layer the sliced cucumber, red bell pepper, and spinach leaves on top of the hummus.

Add Vegetables

Sprinkle crumbled feta cheese over the vegetables.

Place the other half of the roll on top and press gently.

Take a mini sandwich roll and spread 1 teaspoon of mayonnaise on one half and 1 teaspoon of mustard on the other half.

Layer one slice of turkey and one slice of Swiss cheese on the bottom half.

Place a lettuce leaf on top of the turkey and cheese.

Put the other half of the roll on top and press gently.

Place all the prepared sandwiches on a platter, alternating between vegetarian and meat sandwiches.

In a small bowl, mix olive oil and vinegar. Drizzle over the sandwiches for added flavor.

Serve immediately or cover with plastic wrap and refrigerate until ready to serve.
