Method
Chicken Piccata

Prepare the Chicken
Season the chicken breasts with salt and black pepper. Dredge them in flour, shaking off excess.

Cook the Chicken
In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook until golden brown, about 5-7 minutes per side. Remove chicken and set aside.

Make the Sauce
In the same skillet, add garlic and sauté for 1 minute. Pour in chicken broth and lemon juice, scraping up brown bits. Stir in capers.

Meatballs

Mix the Ingredients
In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, eggs, garlic, parsley, salt, and black pepper. Mix until well combined.

Form the Meatballs
Shape the mixture into meatballs, about 1 inch in diameter.

Cook the Meatballs
In a large skillet, heat olive oil over medium heat and add meatballs. Cook until browned on all sides and cooked through, about 10-15 minutes.
Creamy Polenta

Boil the Water
In a large saucepan, bring water to a boil.

Add the Polenta
Gradually whisk in the polenta. Reduce heat to low and cook, stirring frequently, until thickened, about 20 minutes.

Finish the Polenta
Stir in milk, butter, salt, black pepper, and Parmesan cheese. Mix until creamy.
Lemon Broccoli & Cauliflower

Prepare the Vegetables
In a large pot of boiling salted water, blanch the broccoli and cauliflower for about 3-4 minutes until tender-crisp.

Toss with Dressing
Drain and transfer to a serving bowl. Drizzle with olive oil, lemon juice, salt, and black pepper. Toss to coat.

Prepare the Salad
In a large salad bowl, combine chopped romaine lettuce, shaved Parmesan cheese, and croutons.

Make the Dressing
In a small bowl, whisk together garlic, lemon juice, olive oil, Dijon mustard, salt, and black pepper.

Combine and Serve
Pour the dressing over the salad and toss well to combine before serving.
