    In a medium bowl, crush the vanilla wafer cookies until they are fine crumbs. Melt the unsalted butter in a small saucepan or microwave and pour it over the crushed cookies. Mix well until the crumbs are evenly coated.

    Form the Base

    Press the cookie mixture firmly into the bottom of a 9x13 inch baking dish to form an even layer. Set aside to cool while you prepare the filling.

    Blend the Cheesecake Mixture

    In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, mixing until fully incorporated.

    Add Lemon Flavors

    Stir in the lemon juice and lemon zest until the mixture is well blended.

    Whip the Cream

    In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

    Layer the Filling

    Spread the whipped cheesecake filling evenly over the prepared cookie crust in the baking dish.

    Prepare the Pistachio Brittle

    In a saucepan, combine the granulated sugar with 1/4 cup of water. Cook over medium heat until the sugar dissolves and begins to turn golden brown. Stir in the shelled pistachios, and pour the mixture onto a parchment-lined baking sheet. Allow to cool and harden before breaking into pieces.

    Top the cheesecake filling with mixed berries, arranging them evenly across the surface.

    Finish with Brittle

    Sprinkle the broken pieces of pistachio brittle over the berries for added crunch and flavor.

Assembly and Chilling

    Cover the baking dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the cake to set.
