    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Potatoes

    Wash the fingerling potatoes thoroughly under cold water. Pat them dry with a kitchen towel.

    Cut the Potatoes

    Cut the fingerling potatoes in half lengthwise to ensure even cooking.

Roasting

    Season the Potatoes

    In a large bowl, combine the cut fingerling potatoes, olive oil, salt, black pepper, thyme, parsley, chives, and tarragon. Toss until the potatoes are well coated with the oil and herbs.

    Arrange on Baking Sheet

    Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.

    Roast the Potatoes

    Place the baking sheet in the preheated oven and roast for 25-30 minutes or until the potatoes are golden brown and crispy, turning them halfway through the cooking time.

Serving

    Prepare the Watercress

    While the potatoes are roasting, rinse the watercress under cold water and pat dry.

    Once the potatoes are done roasting, remove them from the oven and let them cool for a few minutes. Serve the herb roasted fingerling potatoes topped with fresh watercress.
