Soak the Potatoes
Place the cut potato sticks in a large bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and will result in crispier fries.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat. Use a thermometer to check that the oil reaches 350°F (175°C) for frying.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry using paper towels. This will help prevent oil splatter during frying.

Fry the Potatoes
Carefully add the dried potato sticks to the hot oil in small batches. Fry them for about 5-6 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Drain and Season
Once the fries are cooked, use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle sea salt evenly over the fries.
