Steak Preparation

    Season the Steak

    Rub the flat iron steaks with olive oil, then season generously with salt and black pepper on both sides.

    Cook the Steak

    Heat a skillet over high heat until hot. Add the seasoned steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from skillet and let rest for 5 minutes before slicing.

Fries Preparation

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Rinse the fries in cold water to remove excess starch.

    Fry the Potatoes

    In a large pot, heat vegetable oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt and sprinkle with chopped parsley while still hot.

Red Wine Jus Preparation

    Sauté Shallots

    In the same skillet used for the steak, reduce heat to medium and add the chopped shallot. Sauté until softened, about 2-3 minutes.

    Make the Jus

    Add the red wine to the skillet and scrape the bottom to deglaze. Let it reduce by half, then add the beef broth. Simmer until slightly thickened, about 5-7 minutes. Stir in butter, salt, and black pepper until smooth.

Watercress Salad Preparation

    Prepare the Watercress

    In a bowl, combine watercress, lemon juice, olive oil, and salt to taste. Toss gently to coat.
