Cooking the Grains

Rinse 1 cup of farro under cold water. In a medium saucepan, combine the rinsed farro with 3 cups of water and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes or until tender. Drain any excess water and let it cool.

In a large mixing bowl, combine the chopped kale, Swiss chard, and sliced green onions. Add the chopped parsley, dill, and mint. Mix well.
