Cook the Farro
In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of farro and a pinch of salt. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the farro is tender and the broth is absorbed. Remove from heat and let it sit, covered, for 5 minutes.

Prepare the Kale
While the farro is cooking, rinse 4 cups of kale under cold water. Remove the tough stems and chop the leaves into bite-sized pieces.

Sauté the Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute, or until fragrant.

Combine Ingredients
Once the farro is cooked, add it to the skillet with the sautéed kale. Pour in 2 tablespoons of lemon juice, and season with 1 teaspoon of salt and 1 teaspoon of black pepper. Toss everything together until well combined.

Remove from heat and sprinkle with 1 cup of grated Parmesan cheese before serving. Enjoy your Farro & Kale dish warm!
