Prepare the Capers
Heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the drained capers and fry them for about 2-3 minutes until they become crispy. Remove from heat and set aside.

Prepare the Herbs
In a small bowl, combine the chopped parsley, chives, tarragon, and chervil. Set aside for garnish.

Cook the Eggs
In the same skillet, add the remaining 1 tablespoon of olive oil and reduce heat to low. Crack the eggs into the skillet, being careful not to break the yolks. Sprinkle salt and pepper over the eggs. Cover the skillet with a lid and cook for 4-5 minutes, or until the whites are set but the yolks remain soft.

Assemble the Dish
Once the eggs are cooked, carefully transfer them to a plate. Top with the crispy fried capers and sprinkle the herb mixture over the top. Serve immediately.
