Preparation

  1. 1

    Boil the Eggs

Place the eggs in a saucepan and cover them with cold water, ensuring there's about an inch of water above the eggs. Bring the water to a rolling boil over medium-high heat.

  2. 2

    Cook the Eggs

Once the water reaches a boil, cover the saucepan with a lid and remove it from heat. Let the eggs sit in the hot water for 12 minutes.

  3. 3

    Cool the Eggs

After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This will make peeling easier.

  4. 4

    Peel the Eggs

Once cooled, gently tap each egg on a hard surface and roll it to crack the shell. Peel the shell off under running water to help remove any stubborn bits.

Filling Preparation

  1. 5

    Prepare the Filling

Slice the peeled eggs in half lengthwise and carefully remove the yolks. Place the yolks in a mixing bowl.

  2. 6

    Mix the Ingredients

Add the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the bowl with the yolks. Mash the yolks and mix until smooth and creamy.

Assembly

  1. 7

    Fill the Egg Whites

Using a spoon or a piping bag, fill each egg white half with the yolk mixture.

  2. 8

    Garnish

Sprinkle paprika over the filled eggs for color and flavor. Add a small piece of fresh chives or parsley on top of each for garnish.
