Preparing the Mushrooms

Clean the Mushrooms
Gently clean the maitake mushrooms with a damp cloth to remove any dirt. Avoid washing them under running water as they can absorb moisture.

Shave the Mushrooms
Slice the maitake mushrooms into thin pieces for better crispiness.

Season the Mushrooms
In a mixing bowl, toss the shaved mushrooms with olive oil, salt, and black pepper until evenly coated.
Cooking the Mushrooms

Heat the Pan
Heat a large skillet over medium-high heat until hot.

Making the Guajillo Mole

Prepare the Guajillo Chilies
Remove the stems and seeds from the guajillo chilies. Soak them in hot water for about 15 minutes until softened.

Blend the Mole
In a blender, combine the soaked chilies, garlic cloves, tomato paste, vegetable broth, cumin powder, and salt. Blend until smooth.

Pour the blended mixture into a saucepan and simmer over low heat for 10-15 minutes, stirring occasionally until thickened.

Thinly slice the shallots and set them aside.
