Chicken Preparation

    Marinate the Chicken

    In a large bowl, combine salt, black pepper, garlic powder, paprika, lemon juice, and olive oil. Mix well. Add the chicken halves and coat thoroughly with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare for Frying

    Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 30 minutes before frying.

Frying the Chicken

    Heat the Oil

    In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the chicken halves halfway.

    Fry the Chicken

    Carefully place the marinated chicken halves into the hot oil. Fry for about 10-12 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.

    Drain and Rest

    Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Let it rest for 5 minutes before serving.

    Fry the Herbs

    In a separate pan, heat the olive oil for frying over medium heat. Add the parsley and basil leaves to the hot oil and fry for about 1-2 minutes until they are crispy. Remove with a slotted spoon and drain on paper towels.

Housemade Hot Sauce

    Prepare the Hot Sauce

    In a blender, combine the fresh chili peppers, garlic cloves, white vinegar, and salt. Blend until smooth. Adjust seasoning as needed. Pour the sauce into a bottle and let it sit for at least 30 minutes to develop flavors.
