Preparation

    Prepare the Short Ribs

    Season the short ribs with salt, black pepper, and garlic powder. In a large pot, sear the short ribs and pancetta until browned on all sides. Remove from pot and set aside.

    Make the Sauce

    In the same pot, add the tomato sauce and bring to a simmer, scraping the bottom of the pot to incorporate all the flavors. Return the short ribs to the pot, cover, and let simmer for 2 hours until tender.

    Cook the Pasta

    While the sauce is simmering, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    Prepare Béchamel Sauce

    In a saucepan, melt 4 tablespoons of butter, whisk in 4 tablespoons of flour, and cook for 2 minutes. Gradually whisk in 2 cups of milk, cooking until thickened. Season with salt and pepper to taste.

Assembly

    Layer the Ingredients

    In a large baking dish, spread a layer of tomato sauce at the bottom. Add a layer of lasagna noodles, followed by a layer of béchamel sauce, ricotta cheese, and a portion of the short ribs. Repeat the layers until all ingredients are used, finishing with a layer of noodles and béchamel sauce.

    Top with Cheese

    Sprinkle mozzarella and parmesan cheese evenly over the top layer of béchamel sauce.

Baking

    Bake the Lasagna

    Preheat the oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is golden and bubbly.

    Rest and Serve

    Let the lasagna rest for at least 15 minutes before slicing. Serve warm.
