Preparing the Brussels Sprouts

Trim and Halve
Trim the ends of the Brussels sprouts and remove any discolored leaves. Slice each sprout in half lengthwise.

In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.
Making the Golden Raisin Agrodolce

Combine Ingredients
In a small saucepan, combine golden raisins, apple cider vinegar, honey, and water. Stir to combine.

Simmer
Bring the mixture to a simmer over medium heat. Reduce the heat to low and let it simmer for about 10-15 minutes, or until the raisins are plump and the liquid has thickened slightly.
Roasting and Serving

Roast Brussels Sprouts
Preheat your oven to 425°F (220°C). Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are crispy and golden brown, stirring halfway through.

Prepare Toppings
While the Brussels sprouts are roasting, toast the pumpkin seeds and sesame seeds in a dry skillet over medium heat for about 3-4 minutes, or until fragrant and slightly golden.

Once the Brussels sprouts are roasted, remove them from the oven. Drizzle the golden raisin agrodolce over the top, then sprinkle with toasted pumpkin seeds and sesame seeds before serving.
