    Marinating the Protein

    In a mixing bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Add the salmon fillets and chicken thighs to the bowl, ensuring they are well-coated with the marinade. Let them marinate for at least 30 minutes.

    Preparing the Sides

    While the protein is marinating, you can prepare your sides. If using frozen vegetables, steam them according to package instructions. For mashed potatoes, peel and chop potatoes, boil until tender, and mash with butter, salt, and pepper to taste.

Cooking

    Cooking the Salmon

    Preheat your oven to 375°F (190°C). Place the marinated salmon fillets on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until cooked through and flaky.

    Cooking the Chicken Thighs

    In a skillet over medium-high heat, add a bit of olive oil. Once hot, add the marinated chicken thighs and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.

    If you are preparing rice pilaf, cook according to package instructions while the proteins are cooking. For roasted carrots, toss them with olive oil, salt, and pepper, and roast in the oven alongside the salmon for about 20 minutes.

    Once everything is cooked, plate the salmon and chicken thighs. Add your choice of two hot sides, ensuring to balance the plate with colors and textures. Garnish with fresh parsley for a burst of flavor and color.
