Method

Preparing the Torte Base

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt. Whisk together until well combined.

    Combine Wet Ingredients

    In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

    Combine Wet and Dry Mixtures

    Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.

    Bake the Torte

    Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.

Making the Chocolate Mousse

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt over a double boiler or microwave until smooth. Stir occasionally and let it cool slightly.

    Whip Egg Yolks and Sugar

    In a bowl, whisk the egg yolks and granulated sugar together until pale and thick.

    Combine Chocolate Mixture

    Gradually add the melted chocolate mixture to the egg yolk mixture, stirring constantly until well combined.

    Beat Egg Whites

    In a separate bowl, beat the egg whites until soft peaks form. Gently fold the egg whites into the chocolate mixture.

    Whip Cream

    In another bowl, whip the heavy cream and vanilla extract until soft peaks form. Carefully fold the whipped cream into the chocolate mixture until no streaks remain.

    Chill Mousse

    Cover the mousse and refrigerate for at least 1 hour until set.

Assembling the Torte

    Layer Mousse on Torte

    Once the torte base has cooled completely, remove it from the pan. Spread the chilled chocolate mousse evenly over the torte base.

    Chill Again

    Return the torte to the refrigerator for at least 2 hours to allow the mousse to set firmly.

    Garnish and Serve

    Before serving, top the torte with whipped cream, chocolate shavings, and fresh berries as desired.
