Prepare the Base
In a medium bowl, combine the graham cracker crumbs, cocoa powder, sugar, melted unsalted butter, and salt. Mix until well combined and the mixture resembles wet sand.

Press the mixture into the bottom of a 9x9-inch baking dish evenly. Use the back of a measuring cup or your hands to pack it tightly. Bake in a preheated oven at 350°F (175°C) for 10 minutes.

Remove the crust from the oven and allow it to cool completely in the baking dish.

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a double boiler (or microwave in 20-second intervals) until smooth. Allow to cool slightly.

Whip the Cream
In a large mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Set aside.

Beat Egg Whites
In another bowl, beat the egg whites until foamy. Gradually add granulated sugar and continue beating until stiff peaks form.

Combine Mixtures
Gently fold the melted chocolate into the whipped cream until well combined. Then, fold in the beaten egg whites until no white streaks remain. Be careful not to deflate the mixture.

Spread the mousse mixture evenly over the cooled crust in the baking dish. Smooth the top with a spatula.

Refrigerate the assembled mousse bar for at least 4 hours or until set.
