Method
Preparing the Lobster

Boil the Lobster
In a large pot, bring 4 liters of water to a rolling boil. Add 1 tablespoon of sea salt. Carefully add the live lobsters to the pot, cover, and cook for 8-10 minutes until they turn bright red. Remove the lobsters from the pot and let them cool in an ice bath for about 5 minutes.

Prepare the Lobster Meat
Once cooled, crack the lobsters open and remove the meat from the claws and tails. Cut into bite-sized pieces and set aside.
Grilling the Lemons

Prepare the Lemons
Cut the lemons in half and brush the cut sides with 1 tablespoon of olive oil and sprinkle with sea salt.

Making Drawn Butter

Melt the Butter
In a small saucepan, melt 1 cup of unsalted butter over low heat. Once melted, add 1 tablespoon of minced garlic and cook for 1-2 minutes until fragrant.

Finish the Butter
Stir in 1 tablespoon of lemon juice and 1 tablespoon of chopped fresh parsley. Keep warm until ready to serve.
Preparing the Herb Salad

Mix the Salad
In a bowl, combine 1 cup of mixed herbs, 2 tablespoons of olive oil, and 1 tablespoon of lemon juice. Season with sea salt to taste. Toss gently to combine.
Plating

Serve the Dish
On a large serving platter, arrange the lobster meat, grilled lemons, and herb salad. Drizzle with the drawn butter and serve chilled.
