Method
Preparation
- 1
Prepare the Chicken
Place the chicken breasts between two pieces of plastic wrap and pound them to about 1/2 inch thick using a meat mallet or rolling pin.
- 2
Season and Dredge
In a shallow dish, mix the flour, salt, and black pepper. Dredge each chicken breast in the flour mixture, shaking off the excess.
Cooking
- 3
Sear the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts (in batches if necessary) and cook for about 3-4 minutes on each side until golden brown. Remove the chicken and set aside.

- 5
Deglaze the Pan
Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a boil.
- 6
Add Capers
Stir in the capers and return the chicken to the skillet. Cook for an additional 5 minutes, allowing the chicken to absorb the flavors.
- 7
Finish the Sauce
Remove the chicken once more and whisk in the remaining butter until melted and the sauce is smooth.
- 8
Serve
Plate the chicken and pour the sauce over the top, garnishing with freshly chopped parsley.
