Preparation of Chicken

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

    Set Up Breading Station

    In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs mixed with salt and pepper.

    Bread the Chicken

    Dredge each chicken breast in flour, shaking off the excess. Then dip it into the eggs, allowing any excess to drip off, and finally coat it in the breadcrumb mixture, pressing gently to adhere.

    Fry the Chicken

    In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and place on paper towels to drain excess oil.

Assembly and Baking

    Assemble the Chicken Parmesan

    In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce. Spoon more marinara sauce over each chicken breast and sprinkle a generous amount of shredded mozzarella cheese on top.

    Bake

    Transfer the baking dish to the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.

    Prepare the Hoagie Rolls

    While the chicken is baking, slice the hoagie rolls in half and lightly toast them under the broiler or in a toaster.

    Serve

    Remove the chicken from the oven. Place each chicken breast on a toasted hoagie roll, garnish with fresh basil leaves, and serve with extra marinara sauce on the side.
