Prepare the Caviar
Carefully open the jar of Tsar Nicoulai Reserve American Sturgeon Caviar. Use a non-metallic spoon to serve the caviar in a chilled dish.
Buttermilk Blini Preparation

Make the Blini Batter
In a large bowl, whisk together the all-purpose flour, baking powder, and salt. In another bowl, beat the eggs and mix in the buttermilk. Gradually combine the wet and dry ingredients until just mixed. Avoid overmixing.

Cook the Blini
In a large skillet, melt 1 tablespoon of unsalted butter over medium heat. Pour in about 2 tablespoons of batter for each blini, cooking until bubbles form on the surface (about 2 minutes). Flip and cook for an additional 1-2 minutes until golden brown. Repeat the process until all the batter is used, adding more butter as needed.

Assemble the Caviar Service
On a serving platter, place the buttermilk blinis. Top each blini with a dollop of creme fraiche, a spoonful of caviar, and garnish with chives and red onion. Serve with lemon wedges on the side for an extra burst of flavor.
