Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, salt, and granulated sugar until well combined.

Combine Mixtures
Gradually add the wet mixture to the dry mixture, stirring gently until just combined. Do not overmix.

Add Optional Ingredients
If using, fold in the chopped walnuts or pecans and raisins.
Baking

Pour Batter
Divide the batter evenly between the prepared cake pans.

Bake
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool Cakes
Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, remove from pans and transfer to a wire rack to cool completely.
Frosting (Optional)

Prepare Cream Cheese Frosting
In a medium bowl, beat together 8 oz of cream cheese, 1/2 cup of unsalted butter, 4 cups of powdered sugar, and 2 tsp of vanilla extract until creamy and smooth.

Frost the Cake
Once the cakes are completely cooled, spread the cream cheese frosting between the layers and on top and sides of the cake.
