Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 400°F (200°C).
- 2
Prepare the Butternut Squash
Cut the butternut squash in half lengthwise and scoop out the seeds with a spoon. You can peel it with a vegetable peeler if you prefer, but it's not necessary.
- 3
Cube the Squash
Cut the squash into 1-inch cubes. This will help it cook evenly and quickly.
- 4
Season the Squash
In a large bowl, combine the cubed butternut squash with olive oil, salt, black pepper, garlic powder, and paprika. Toss until the squash is well coated.
Cooking
- 5
Roast the Squash
Spread the seasoned butternut squash cubes evenly on a baking sheet lined with parchment paper. Make sure they are in a single layer for even roasting.
- 6
Bake
Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the squash is tender and begins to caramelize. You can stir the squash halfway through cooking for even browning.
- 7
Garnish
Once cooked, remove the squash from the oven and sprinkle with fresh parsley before serving.
