Pudding Base Preparation

    Combine Dry Ingredients

    In a medium saucepan, whisk together the sugar, cornstarch, and salt.

    Mix Wet Ingredients

    Gradually whisk in the milk until smooth.

    Heat Mixture

    Place the saucepan over medium heat and cook, stirring constantly until the mixture thickens and starts to bubble.

    Add Egg Yolks

    In a small bowl, beat the egg yolks, then slowly temper them by adding a bit of the hot pudding mixture to the yolks, whisking constantly. Pour the yolk mixture back into the saucepan.

    Continue to cook for another 2-3 minutes until fully thickened. Remove from heat and stir in the vanilla extract.

    Transfer the pudding to a bowl, cover with plastic wrap directly on the surface, and refrigerate until chilled (about 2 hours).
