    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and set aside.

    Grill the Wagyu Patties

    Preheat the grill to high heat. Form the wagyu beef into two patties, season with salt and pepper. Grill the patties for about 3-4 minutes on each side for medium-rare. During the last minute, place a slice of sharp cheddar and a slice of Gruyère Swiss cheese on each patty to melt.

    Prepare the Brioche Rolls

    While the patties are grilling, split the brioche rolls and lightly butter the cut sides. Toast the rolls on the grill until golden brown.

    Assemble the Burger

    On the bottom half of each toasted brioche roll, spread a generous amount of parmesan-garlic mayo. Add the lettuce, grilled wagyu patty with melted cheese, crispy bacon, a spoonful of cabernet onion marmalade, and tomato slices. Top with the other half of the brioche roll.
