Method

Short Ribs Preparation

Sear the Short Ribs

In a large pot, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, then sear on all sides until browned. Remove and set aside.

Sauté Aromatics

In the same pot, add chopped onion and minced garlic. Sauté until translucent.

Braise the Ribs

Add cola and beef broth to the pot along with the short ribs. Bring to a boil, then cover and reduce heat to low. Let simmer for 2.5 to 3 hours until tender.

Cheese Grits Preparation

Cook the Grits

In a pot, bring water to a boil. Add grits and salt, reduce heat and simmer, stirring often, until thickened (about 20 minutes).

Add Cheese and Butter

Stir in cheddar cheese and butter until melted and creamy.

Wilted Greens Preparation

Cook Bacon

In a skillet, cook bacon until crispy. Remove and chop, leaving the drippings in the pan.

Sauté Greens

Add minced garlic and olive oil to the drippings. Add greens and sauté until wilted. Season with salt and stir in the chopped bacon.

Vinaigrette Preparation

Mix Vinaigrette

In a small bowl, whisk together apple cider vinegar, honey, olive oil, salt, and pepper until emulsified.
