Prepare the Filet Mignon
Season the filet mignon steaks with salt and black pepper. Preheat a grill or grill pan over medium-high heat. Add a tablespoon of butter to the grill. Grill the steaks for about 4-5 minutes on each side for medium-rare, adjusting cooking time to your desired doneness.

Cook the Eggs
In a non-stick skillet, melt the remaining butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 2-3 minutes. Season with salt and pepper.

Prepare the Sauces
While the steaks and eggs are cooking, warm the demi-glace in a small saucepan over low heat. If using pre-made béarnaise sauce, warm it gently in another saucepan or in the microwave, as per package instructions.

Assemble the Dish
Place the grilled filet mignon on a plate. Spoon the warmed demi-glace over the steak. Top with a generous amount of béarnaise sauce. Serve with the over-easy eggs on the side and warm southern style biscuits.
