    Prepare the Brussels Sprouts

    Preheat your oven to 400°F (200°C). Rinse the Brussels sprouts, trim the ends, and cut them in half.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and place it on a paper towel to drain. Leave about 1 tablespoon of bacon fat in the skillet.

    Sauté the Aromatics

    In the same skillet, add the sliced chilies and grated ginger. Sauté for about 1-2 minutes until fragrant.

    Combine and Season

    Add the halved Brussels sprouts to the skillet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine.

    Roast the Brussels Sprouts

    Transfer the Brussels sprouts to a baking sheet and roast in the preheated oven for 20-25 minutes until golden brown and tender.

    Prepare the Glaze

    In a small bowl, mix together the bourbon and honey until well combined.

    Once the Brussels sprouts are done roasting, drizzle the bourbon honey glaze over them and crumble the cooked bacon on top. Toss gently and serve warm.
