Marinate the Chicken
In a large bowl, soak the bone-in chicken pieces in buttermilk. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare the Breading
In a separate bowl, combine flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.

Bread the Chicken
Remove chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring a full coating. Shake off any excess flour.

In a large, deep skillet or Dutch oven, heat vegetable oil over medium-high heat to 350°F (175°C).

Carefully place breaded chicken pieces in the hot oil, cooking in batches to avoid overcrowding. Fry for about 10-15 minutes per side or until golden brown and cooked through. Internal temperature should reach 165°F (75°C).
