Prepare the Pork Belly
Let the pork belly cubes sit for about 30 minutes to absorb the flavors.
Smoke the Pork Belly
Place the seasoned pork belly cubes in the smoker and smoke for 3 hours, or until they reach an internal temperature of 190°F (88°C).
Glaze the Pork Belly
In a saucepan, combine apple cider vinegar, honey, and smoked blackberries. Bring to a simmer over medium heat and let it reduce for about 15 minutes, stirring occasionally.
Finish Smoking
After 3 hours, remove the pork belly from the smoker and toss it in the glaze. Return the glazed pork belly to the smoker for an additional 30 minutes.
Prepare the Greens
In a separate skillet, wilt the mixed greens over medium heat until tender, about 5 minutes. Season with salt and pepper to taste.
Serve
Serve the smoked pork belly burnt ends on a plate with wilted greens on the side. Drizzle whole grain dijonnaise sauce over the top to enhance the flavor.
