Prepare the Ingredients

Wash the kale thoroughly, remove the tough stems, and chop it into bite-sized pieces. Dice the onion and mince the garlic.

Cook the Bacon

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the drippings in the pan.

Caramelize the Onions

In the same skillet, add the diced onion and cook in the bacon drippings over medium heat until soft and caramelized, about 8-10 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

Braised Kale

Add the chopped kale to the skillet, stirring to combine with the onions and garlic. Pour in the broth, and season with salt, black pepper, and red pepper flakes. Bring to a simmer and cover the skillet.

Finish the Dish

Cook the kale for about 15-20 minutes, stirring occasionally, until tender. Crumble the cooked bacon and stir it back into the kale before serving.
