Grape Leaves

Method

Grape Leaves

Prepare the Filling

In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in rice, diced tomatoes, salt, pepper, and lemon juice. Mix well and cook for about 5 minutes.

Stuff the Grape Leaves

Lay grape leaves flat and place a spoonful of the filling at the base of each leaf. Roll tightly, folding in the sides as you go. Place stuffed leaves seam-side down in a pot.

Cook the Grape Leaves

Add water to the pot, enough to cover the leaves. Bring to a boil, then reduce heat and simmer for 30-40 minutes until the leaves are tender.

Falafel

Prepare the Falafel Mixture

In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, and salt. Pulse until well blended but still slightly chunky.

Form the Falafel Balls

Shape the mixture into small balls or patties, about the size of a golf ball.

Fry the Falafel

Heat oil in a deep skillet over medium heat. Fry falafel in batches until golden brown on all sides, about 4-5 minutes. Drain on paper towels.

Hummus

Blend the Ingredients

In a food processor, combine drained chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water. Blend until smooth, adding more water if needed to achieve desired consistency.

Serve the Hummus

Transfer hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika for garnish.

Moujadara

Cook the Lentils

In a pot, combine lentils and water. Bring to a boil and simmer until lentils are tender, about 20 minutes.

Add Rice

Stir in rice, salt, and black pepper. Add more water if necessary. Cover and simmer for another 20 minutes until rice is cooked.

Prepare the Onions

In a separate skillet, heat olive oil. Add sliced onions and sauté until caramelized, about 15 minutes.

Serve

Top the lentil and rice mixture with the caramelized onions before serving.

Moussaka

Prepare the Vegetables

Preheat the oven to 350°F (175°C). Brush eggplant, zucchini, and potato slices with olive oil and season with salt and pepper. Bake for 20-25 minutes until golden.

Make the Sauce

In a skillet, heat olive oil and sauté onion and garlic until fragrant. Add tomato sauce, salt, pepper, and cinnamon. Simmer for 10 minutes.

Layer the Moussaka

In a baking dish, layer the baked vegetables and top with the sauce. Repeat the layers and finish with a layer of sauce.

Bake

Cover with foil and bake for 30-40 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly.

Salad

Prepare the Salad

In a large bowl, combine mixed salad greens, diced cucumber, and diced tomatoes.

Dress the Salad

Drizzle with olive oil and lemon juice, then season with salt to taste. Toss well to combine before serving.
